Last year on December, Rumpa Das, the celebrity journalist from leading newspaper of West Bengal contacted me for some recipes to be published in their newspaper. But as I don't stay in Kolkata, she asked me whenever I'll be in Kolkata, would let her know. Few weeks ago, we had to Kolkata for a family emergency. When the problem has been sorted out, I'd informed her about my stay in Kolkata. She replied with a huge project of 10 dishes to be done by me. As I don't stay permanently there, she wanted to click the pictures of the dishes and will publish later. She gave me 2 theme, one is Oatmeal and another one is Curd. 5 delicious but easy dishes I'd to cook with each theme. So very obviously I've made Oatmeal Pancakes, which is very easy to make, delicious in taste as well as very nutritious too. This is a kids' friendly recipe. As Maida/all-purpose flour has not been used, it makes the dish even healthier. So let's check the recipe below...

Oatmeal Pancakes


Ingredients

  • Instant Oatmeal 1 cup
  • Whole wheat flour 1/2 cup
  • Brown sugar 4 teaspoons
  • Baking powder 1 teaspoon
  • Cinnamon powder 1 teaspoon
  • Pinch of salt
  • Curd 1/2 cup
  • Egg 1, well beaten
  • Whole milk as much as required
  • Butter for frying
  • Honey to drizzle

Oatmeal Pancakes


Steps to Prepare

  • Take the oatmeal in a small blender, and blend to make fine powder. Put the oatmeal flour in a large bowl.
  • Now add the dry ingredients one by one. First add whole wheat flour, brown sugar, baking powder, cinnamon powder & salt. Now lightly mix everything using a hand mixer.
  • Now add curd and mix again. Add beaten egg in to the mixture and mix well. Now add milk little by little to make a thick batter like dosa batter. Remember the batter must not be too thick or too thin.
  • Now take a non-stick pan, brush little butter on it, take a ladle full of pancake batter and pour on the pan. Let one side to cook till nicely brown in color, flip carefully to cook the other side. When the other side is done, take the pancake out of the pan and place on a serving plate.
  • Make rest of the pancakes in the same way.
  • Drizzle honey on the top before serving....
  • Enjoy healthy nutritious breakfast with some juice or coffee...
