Puran Poli

Puran Poli is a Marathi sweet delicacy, which is use to prepare during this festive season. This sweet is made with whole wheat flour or refined flour with cooked chana dal and jaggery mix stuffing. Puran Poli can be stored for long time at room temperature. Poli means flatbread, while Puran considered as sweet. So this is actually sweet flatbread or sweet paratha. Puran Poli is traditionally a Maharashtrian delicacy. In every Maharashtrian occasion, Puran Poli is a must item in the menu. Just like our Bengali delicacies. As in every Bengali occasions Misti Doi is a must item. I had Puran Poli first time in Hyderabad from one of my Marathi friend Sweta. She follows her mother's Puran Poli recipe and makes delicious polis and of course shares with me. After having Puran Polis so many times at her place, I decided to learn this from her and share it with my readers. So here is the recipe of traditional Puran Poli recipe.

What is Puran Poli?
Puran Poli is a flatbread stuffed with a sweet lentil stuffing. In Marathi language the sweet stuffing is known as Puran, and the flat bread is called Poli. While Puran Poli is considered a sweet, the ingredients make it quite healthy. In the authentic Maharashtrian Puran Poli recipe, the stuffing is made from chana dal (also known as Bengal gram) which are husked and split black chickpeas. The cooked chana dal lentils are sweetened with jaggery and spiced with cardamoms. The Poli (flatbread) is made from a mix of whole wheat flour (Atta) and all purpose flour (Maida).
There are a few variations of this delish flatbread found in the Western and Southern parts and regions in India.

Preperation steps for Puran Poli

Prepare the stuffing:

  Take Chana dal in a pressure cooker, add water, salt, turmeric and ghee and pressure cook it for about a minute (3-4 whistles).

  The water will be evaporated, so no water will be left to drain.

  Mash the boiled dal coarsely.

  Now in a pan, heat 1 tablespoon ghee, pour the mashed dal and add jaggery. Mix it thoroughly and cook slowly.

  Add cardamom & nutmeg powder to it and mix thoroughly.

  Continue stirring on low flame until it gets dry.

  Let the mixture cool down.

Make the dough:

  Take Maida in a bowl.

  Add salt, turmeric and ghee. Mix well.

  Add sufficient amount of water and make semi-soft dough.

  Wrap the bowl with a plastic sheet or damp cloth and leave it for 30 minutes.

Making the Puran Poli:

  Make flat balls out of the dough like we make for chapatis.

  Dust it using Maida flour and roll it in round shape with a roller.

  Fill the Puran (stuffing) in it and then cover the edges. Roll it out again in round shape.

  Heat tawa and cook the Puran Poli on both sides with lots of ghee.

  Puran Poli is ready to eat. Serve it hot with some more ghee poured over.

Serving Tips

Serve puran polis warm with some ghee on the top. 

Notes

  • Puran poli can be made with only maida or only atta.
  • Or you can use atta & maida both in same ratio.
  • This recipe is made with pure ghee, which enhance the flavor of the dish.
  • You can improvise the stuffing by adding some coconut or mawa along with the dal. Though that is not the traditional recipe, but can be improvised as per your taste.
